B: Hello guys and gals. In today’s Food Delight, we introduce you to roast beef served with the savory pastry known as Yorkshire pudding, which could be called the quintessential British dinner. This recipe came from our British friend, Abby Chitty, whose family serves the dish every Sunday as a British tradition. 
A: This beef roast only takes 20 minutes of hands-on preparation before you whisk it into the oven, giving you plenty of time to prepare side dishes. Abby's recipe for this British classic is just lovely. The meat becomes tender and full of flavor, served with the classic pudding, crispy baked potatoes, and baby carrots, making your holiday dinner extra special!

“So this is a very British one, which is roast beef with Yorkshire pudding. You just have to cook it for quite a long time to make it tender. The Yorkshire puddings is not a pudding, it’s actually savory. You can actually have it in a few dishes but the one it goes best with is roast beef. And what you do is you get a mixing bowl, beat 2 eggs until they’re frothy, and then in another bowl, mix the salt and flour, and then you stir the beaten eggs into the flour and then gradually pour in the milk.  Preheat the oven to 400 degrees F (200 degrees C), and then what you need is a muffin tin. So you pour the mixture into the muffin tin and then you place it in the oven.”, Abby said.

B: A tip to get the best results, is to make sure the oil in the tin is very hot before adding the batter, and avoid opening the oven door during cooking as it can cause the pudding to collapse.

A: For juicy roast beef, timing and temperature are vital. A better way to work out the cooking time is to stick a meat thermometer into the thickest part of the beef. Note that the beef needs to be rested for 20 - 30 minutes after coming out of the oven, and its internal temperature will continue to rise.

“We normally serve it with the roast beef. We have it with the Yorkshire pudding. It’s very light, and crispy. It’s a little bit like a puff pastry but nicer, less flaky. And we have it with beef and normally roast potatoes, roast vegetables like parsnips, and carrots,” Abby elaborates.

A: The dish is a perfect choice for people who'd like nothing more than to spend a Sunday afternoon surrounded by wonderful aromas in their kitchen. 

“And normally we have it as a Sunday lunch. And every Sunday, traditionally we have a roast lunch. And beef is one of the options you can have. That’s very traditionally British. You will start cooking in the morning so that the beef is cooked well, and then we normally eat around 2pm. And we have a long lunch until about 4pm. So then we have a late and small dinner in the evening because lunch is normally quite big. You can also buy them premade at the supermarket, but it’s more fun to make at home," Abby again.
