Bacteria-killing compound discovered in Vietnam's fermented pork snack
(VOVWORLD) -A research team from RMIT Australia University recently announced that in Vietnamese fermented pork roll, Nem Chua, there is a bacteria-killing compound called Plantacyclin B21AG that helps food retain its flavor for a long time.

The group believes that the compound has the potential to become a safe and natural food preservative in the future. Plantacyclin B21AG is colorless, odorless, tasteless, and stable, one of a group of compounds known as bacteriocins, which are produced by bacteria to destroy rival bacterial strains. The research team has identified suitable growing conditions for culturing this bacterium in large numbers.
